Serras do Mondego – Queijaria Artesanal was born in November 2016, through secrets and flavors passed from hand to hand in the fields of Fornos de Algodres. The passion for the heritage of cheese making and animal husbandry left by the owners' grandparents was the biggest motivation for the project. The cheeses are made with respect for the artisanal production techniques learned and inherited by ancestors. All production is manual, using only equipment that facilitates some stages of manufacturing, thus combining old know-how with new technologies. Production is artisanal, and the product obtained is free of additives of any kind and can be consumed in its entirety, including the peel.
